Goji Berry Muffins
Goji berry muffins are one of the easiest breakfast snacks you can bake and even easier to bring out of the freezer for nutrition on the go!
Goji berries are usually compared to other fruit like; cranberries, or sour cherries. The goji berry is tart and slightly sour adding some flavor punch to our vegan muffin recipe.
Marvelous Goji Berry Muffin Recipe
Goji Berry Muffin Ingredients:

2 cups gluten free oat flour or GF all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon rock salt

⅔ cup white whole seed chia

2 tablespoons coconut oil, melted

1 teaspoon vanilla
-
1 cup unsweetened apple sauce

2 teaspoons grated lemon rind
-
⅓ cup maple syrup
-
½ cup goji berries, coarsely chopped

¼ cup slow roasted hemp seeds
Goji Berry Muffin Directions:

Preheat oven to 300F.

Grease 24 muffin tins with coconut oil, (or use cupcake papers to make it really easy!).

In a medium sized mixing bowl, mix flours, baking powder, baking soda, rock salt and chia.

In a second bowl, mix together coconut oil, vanilla, apple sauce, lemon rind, maple syrup and goji berries.

Mix goji mixture into dry mix quickly and place into muffin tins.

Bake for 25 minutes, remove and let cool before removing from tin.
