Cranberry Quinoa Salad with Tri-Citrus Dressing
Our quinoa salad & citrus dressing recipe is entirely gluten free. The salad and dressing recipe balances sweet and tart flavors with crunchy and soft textures. Quinoa includes all nine essential amino acids, and is high in dietary fiber, minerals and antioxidants. Plus the salad loaded with additional plant-based proteins like sesame and hemp seeds.
Cranberry Quinoa Salad Instructions:
1 large apple, chopped
2/3 cup dried cranberries, finely chopped
1 cup roasted slivered almonds
1 cup roasted sesame seeds
3/4 cup roasted hemp seeds
1.5 cups cooked quinoa
Tri-Citrus Dressing Recipe:
2 tbsp maple syrup
1/2 tsp onion powder
1/4 cup orange juice
1/2 tsp dried ginger
1/2 tsp salt
juice of 1/2 lemon
juice of 1/2 lime
all cloves from one whole garlic bulb, baked
Instructions: Blend first three ingredients in food processor until smooth. Add remaining ingredients and blend until desired consistency.
Serve: Combine salad ingredients in a bowl. Blend dressing ingredients and drizzle over salad.
