Vanilla-Chocolate Chip Pancakes

Makes 7 Pancakes


  • 2 scoops Edica MCT Powder

  • 2 scoops almond meal

  • 4 egg whites or 1/2 cup of egg substitute

  • 1/2 cup of water

  • 3 teaspoons Yacon Powder

  • 1/2 teaspoon vanilla

  • 1/4 cup of Organic Cacao Nibs

1. Mix all the ingredients together until a batter is formed (if really thick, add a table spoon of water until the mixture is less sticky).

2. Pour batter onto a heated non-stick pan to form a pancake.

3. Flip pancake once the bottom bubbles, then remove promptly when each side is cooked.

4. The batter should make approximately seven pancakes.
