Quin-WOW Coconut Curry

Makes 8 Cups


  • 1 ½ cups sweet onions, diced
  • 1 ½ tablespoons garlic, minced
  • 2 tablespoons coconut oil
  • 4 cups yams, diced (3 small ones)
  • 2 cups vegetable broth
  • 2 cups cauliflower florets, chopped (about ½ head)
  • 2 cups broccoli florets, chopped (about ½ a head)
  • 1/3 cup dried red lentils
  • 1/3 cup uncooked unpolished quinoa
  • 2-14oz cans lite coconut milk
  • 3 tablespoons lime juice
  • 1 tablespoon garam masala powder
  • 1 tablespoon cacao powder
  • 1 teaspoon minced ginger (or ginger puree)
  • 1 teaspoon finely chopped basil
  • 1 ½ teaspoons lemon grass puree (optional – at most grocery stores in produce)

A well-made curry is like a great pair of well-worn shoes: comfortable, familiar and satisfying, and will keep you going for a long time. Well, this one will not disappoint. With lots of nutrients and protein, this curry will fill you up and satisfy your taste buds, belly, and body.


1. In a large pot on medium heat, heat coconut oil until melted then add onions and garlic.

2. Cover and cook for 5-10 minutes until onions are slightly translucent, stir occasionally.

3. Add in yams and vegetable broth, cover and cook for another 15 minutes, stirring occasionally.

4. Turn down heat to medium/low and add in remaining ingredients. Cover and cook for another 25 minutes, stirring occasionally until all vegetables are cooked through.

5. Serve on its own or over brown rice or rice noodles.
