Recipe: Simplicious Salsa

This salsa is really easy to make with a fresh flavor as the sweetness of the mangoes combined with the tang of the lime and the crunch of the cucumbers is a satisfying culinary break. The enzymes in mangoes helps to relieve indigestion and the high level of soluble dietary fiber, pectin and vitamin C helps to lower bad cholesterol. Mangoes are also rich in iron and contain Glutamine acid which is good to boost memory and keep cells active.

Ingredients

· ripe mangoes, skinned and diced

· 3 green onions, finely chopped

· 1 cup cucumber, diced

· 3 teaspoons lime juice

· 1 tablespoon chia

· 2 teaspoons cilantro,                      washed/dried and finely chopped

· ¼ teaspoon rock salt

Directions

1. Add all ingredients together and refrigerate before serving.

2. Can be served with tortilla chips, crackers or pita.

3. Can be refrigerated for a few days.
